How to Bake Banana Bread Without a Recipe

  1. Understand the Basic Formula. Banana bread follows a simple ratio: 2 cups flour, 1/2 to 3/4 cup fat (butter or oil), 1/2 to 3/4 cup sugar, 2-3 eggs, and 3-4 very ripe bananas. You'll also need 1 teaspoon baking soda, a pinch of salt, and about 1/4 cup liquid (milk or water) if needed. The riper your bananas, the sweeter and more flavorful your bread will be.
  2. Prepare Your Ingredients. Preheat your oven to 350°F and grease a 9x5 inch loaf pan. Mash your bananas in a large bowl until mostly smooth with just a few lumps. If using butter, melt it and let it cool slightly. Crack your eggs into a small bowl and give them a quick whisk.
