How to Safely Use a Kitchen Knife

Learn the proper grip and cutting techniques to help in the kitchen while keeping your fingers safe. HowTo: Family Edition: family how-tos that actually help.

  1. Set up your station. Place your cutting board on a flat, sturdy counter. To stop it from sliding, place a damp paper towel underneath the board. This keeps your workspace steady and safe.
  2. Master the 'claw' grip. Place your non-cutting hand on the food. Curl your fingers inward like a claw, keeping your fingertips tucked away from the blade. Rest your knuckles against the side of the knife to act as a guide.
  3. Hold the knife correctly. Grip the handle firmly with your dominant hand. Keep your index finger and thumb on the base of the blade for extra control. Ask a grown-up to show you exactly where to place your fingers for your specific knife.
  4. Make your first cut. Place the tip of the knife on the cutting board. Use a gentle rocking motion, pushing the blade forward and down through the food. Keep your fingers tucked in the 'claw' position the entire time.
