How to Measure Ingredients Like a Pro

- Measure dry ingredients. Scoop the ingredient into the cup until it is overflowing. Use the flat edge of a knife to scrape across the top of the cup, pushing the extra ingredient back into the bag. This is called 'leveling' and it makes sure your measurement is exact.
- Measure liquid ingredients. Place your liquid measuring cup on a flat, level surface like a counter. Pour your liquid in slowly until it reaches the correct line. Bend down so your eyes are level with the measurement markings to make sure you have the right amount.
- Measure small amounts. When using measuring spoons for things like baking powder or vanilla, dip the spoon directly into the container. Just like with dry cups, use a flat edge to scrape off any extra so the spoon is perfectly level.
