How to Freeze Meals for Later: A Family Guide to Meal Prep

Learn how to safely freeze homemade meals to save time and money while feeding your family nutritious food.

  1. Choose the Right Meals to Freeze. Not all foods freeze well, so start with freezer-friendly options. Casseroles, soups, stews, chili, lasagna, and cooked pasta dishes work beautifully. Meatloaf, meatballs, and marinated meats also freeze great. Avoid freezing meals with mayonnaise, cream-based sauces, fried foods, or dishes with lots of fresh vegetables like lettuce or cucumbers, as these don't hold up well in the freezer.
  2. Prepare Your Meals for Freezing. Cook your meals completely and let them cool to room temperature before freezing. Divide large batches into family-sized portions using freezer-safe containers, heavy-duty freezer bags, or aluminum pans covered with foil. Leave about an inch of space at the top of containers since food expands when frozen. For soups and stews, consider freezing them in freezer bags laid flat - they'll stack neatly and thaw faster.

Use masking tape on containers if permanent marker won't stick well. This step seems simple but it's crucial - you won't remember what everything is after a few weeks in the freezer.
  4. Store Meals Properly. Place new meals in the back of your freezer where it's coldest, and move older meals to the front so you use them first. Keep your freezer at 0°F or below. Don't overpack your freezer - air needs to circulate for proper freezing. Try to use frozen meals within 2-3 months for best quality, though they'll be safe to eat much longer.
  5. Thaw and Reheat Safely. The safest way to thaw frozen meals is in the refrigerator overnight. For faster thawing, you can use cold water (change the water every 30 minutes) or your microwave's defrost setting. Never thaw meals on the counter at room temperature. When reheating, make sure food reaches 165°F throughout. Add a splash of water or broth if the meal seems dry after reheating.
