How to Make Hot Chocolate from Scratch

  1. Gather Your Ingredients. You'll need: 4 cups whole milk, 1/3 cup unsweetened cocoa powder, 1/4 cup granulated sugar, 2 tablespoons cornstarch, 1/4 teaspoon vanilla extract, and a pinch of salt. For extra richness, you can add 2 ounces of chopped dark chocolate. Have marshmallows, whipped cream, or cinnamon ready for toppings.
  2. Mix the Dry Ingredients. In a medium saucepan, whisk together the cocoa powder, sugar, cornstarch, and salt until well combined. This prevents lumps from forming when you add the milk. Make sure there are no clumps of cocoa powder.
  3. Add the Milk Gradually. Pour about 1/2 cup of the milk into the dry mixture and whisk vigorously until smooth. This creates a paste that helps prevent lumps. Gradually add the remaining milk while continuing to whisk. The mixture should be completely smooth.
  4. Heat and Stir. Place the saucepan over medium heat and cook, stirring constantly with a whisk, for 5-7 minutes. The mixture will gradually thicken and small bubbles will appear around the edges. Don't let it boil vigorously or it might curdle. If adding chopped chocolate, stir it in during the last minute of cooking.
