How to Make a Perfectly Crispy Grilled Cheese Sandwich

- Choose the Right Ingredients. Start with good-quality bread that's about half an inch thick - white, sourdough, or whole wheat all work well. Avoid bread that's too thin, as it will burn before the cheese melts. For cheese, mild or sharp cheddar melts beautifully, but you can also try Swiss, American, or a combination. Use real butter rather than margarine for the best flavor and browning.
- Prepare Your Sandwich. Take your butter out of the fridge 10-15 minutes early so it's soft enough to spread easily. Butter one side of each bread slice generously - this buttered side will face outward when cooking. Place your cheese between the unbuttered sides of the bread. Don't overstuff with cheese, as it will ooze out and burn in the pan.
- Heat Your Pan Properly. Use a heavy-bottomed pan like cast iron or stainless steel for even heat distribution. Heat the pan over medium-low heat for 2-3 minutes before adding your sandwich. The pan should be warm but not smoking hot - if butter sizzles aggressively when it hits the pan, turn the heat down.
- Cook Low and Slow. Place your sandwich in the pan and let it cook for 3-4 minutes without moving it. You'll hear gentle sizzling but shouldn't see smoke. Check the bottom by lifting one corner with a spatula - it should be golden brown. Flip carefully and cook another 3-4 minutes. The slow cooking allows the cheese to melt completely while the bread develops a perfect crispy crust.
- Finish and Serve. Once both sides are golden brown and you can see the cheese is melted, remove from heat. Let the sandwich rest for 1-2 minutes before cutting - this helps the cheese set slightly so it won't all pour out. Cut diagonally with a sharp knife and serve immediately while the outside is still crispy.
